Tonka Bean Panna Cotta with Baked Apple Salad

After a sumptuous Christmas dinner, this fruity-light delicacy will lighten up your palate.

Ingredients (for 4 persons)

Panna Cotta
300 ml almond milk
30 g brown sugar
½ tsp tonka bean, ground
2 g agar agar

Baked Apple Salad
1 apple, peel, cut into small cubes
1 tbsp sultanas
1 tbsp barberries
1 tbsp almonds, roughly chop
½ tbsp candied ginger, chop
½ tsp spice mix “Dessert Masala”
½ tsp gingerbread spice
75 ml apple juice
a little maple syrup

Preparation

Panna Cotta
Place the almond milk, sugar, tonka bean and agar agar in a pan and bring to the boil briefly while stirring. Pour the panna cotta mixture into moulds and chill in the fridge for at least 1 hour.

Baked Apple Salad
Prepare the ingredients as described, and simmer them in a pan for a few minutes until the liquid has almost boiled away. Remove the pan from the heat, set aside and leave to cool slightly. Arrange the baked apple salad on plates, turn the panna cotta out of the moulds and plate with the salad.
